Tasting Notes

A syrup with the structure of a good whisky.

Pour a thimble, hold it to the light. Mahogany with a cognac rim. The nose opens with charred oak, honey and vanilla — baking spice drifting up behind. On the palate it reads as maple, but it doesn't stay there. Kentucky bourbon has loaned it structure; the old barrels have given it authority. It is, structurally, closer to an añejo rum than to table syrup.

Signature Recipe

Toasted fennel seed cake, maple crème fraîche & sea foam.

Fennel and ginger spiced cake made with BLiS Bourbon Barrel Aged Maple Syrup, served with maple-sweetened crème fraîche and airy maple sea foam candy. Steve's own recipe — the one that's been making the rounds of the shop's dinner parties for years.

Fennel Seed Cake

  1. Preheat oven to 325°F. Spray a loaf pan or 8" × 8" square cake pan. Line the bottom with parchment.
  2. Toast fennel seeds in a small pan until fragrant. Let cool and crush fine with a mortar and pestle or spice grinder.
  3. Beat together room-temperature butter and maple syrup. Combine olive oil, milk, and eggs; slowly add into butter and syrup. Scrape the sides of the bowl, add in rum, and beat as smooth as possible — the mixture may look a little broken.
  4. Sift together flour, baking soda, baking powder, ginger and salt in a large bowl. Add the crushed fennel seeds to the dry mixture after sifting.
  5. Make a well in the center of the dry ingredients and fold in the wet in three stages, just until combined. Fold in yogurt just until combined.
  6. Pour into the prepared pan and bake until the center is set and the sides are just starting to pull away from the pan.

Maple Crème Fraîche

  1. Whip all ingredients together to medium peak.

Maple Sea Foam

  1. In a small saucepan combine all ingredients except the baking soda. Do not stir. Bring to 300°F.
  2. Sift the baking soda while the syrup is heating up.
  3. When syrup reaches temperature, take off the heat and quickly whisk in the baking soda. Immediately pour onto a tray lined with a Silpat. Do not move, touch or look at it funny — it will deflate.
  4. Let cool at least 1 hour before breaking into pieces. Store in an airtight container for 2–5 days depending on humidity.

01Is there alcohol in the finished syrup?
A trace, measurably under 0.5% ABV — the bourbon in the barrel flavors the syrup but does not remain in it in any meaningful quantity. Our syrup is sold as a food product, not an alcoholic beverage, and ships everywhere in the United States without age restriction.
02What's the difference between this and your 100% Pure?+
Same Michigan maple base. This one rests in hand-selected Kentucky bourbon barrels for months before bottling, picking up charred oak, baking spice, honey, and vanilla from the staves.
03Does it need to be refrigerated?+
Not unopened — pantry-stable indefinitely. Once opened, refrigerate and use within a year.
04Which barrel does it come from?+
Each bottle is dated and numbered to its barrel of origin. We never blend across casks. Different barrels have different character; we taste every one before release.
05How does Subscribe & Save work?+
