BLiS #9 Sherry Wine Vinegar
Reserve sherry vinegar transformed through our signature "Double Solera" process. Aged in Kentucky bourbon casks previously home to BLiS maple syrup, creating layers of complexity beyond conventional vinegars. Where ordinary sherry vinegar offers acidity, BLiS #9 delivers enhanced sweetness with notes of wood, orange peel, vanilla, and butterscotch.

We begin with premium sherry wine vinegar already matured in Spain's traditional solera system—a method of fractional blending where older vinegar is partially drawn from each barrel and newer vinegar is added to maintain continuous maturation. Upon arrival, we introduce it to our own "Double Solera" aging process in single barrel Kentucky bourbon casks that previously housed our signature maple syrup. This sequential aging creates a dimensional flavor inheritance impossible to replicate through conventional methods.
The result communicates with refined complexity: the vinegar's natural acidity gains enhanced sweetness from its maple-cured barrels, while notes of wood, orange peel, vanilla, and butterscotch emerge from the bourbon's legacy.
