We begin with our signature BLiS yuzu vinegar, then layer in maple-bourbon aged soy sauce and barrel-aged fish sauce – each already complex from their time in our Michigan bourbon barrels. This foundation is then elevated with hand-harvested spruce tips and premium kombu, creating a dimensional umami profile impossible to achieve with conventional ingredients.
